Menu Plan - January 31 - Feb 6

Well, I've been sick with strep throat for several days.  Now here it is Monday and I hadn't even thought of what we'd eat this week.  I hate it when things work out to where I have to plan the whole menu in one day.  I usually take several days to make the menu for next week.  This way I can really think about what I'm doing, have some good variety, and make sure that I'm making the best use of the ingredients that I already have on hand.  Weeks like this, when I don't have a lot of time to make the menu, I usually resort to my "old-standby's" (this is Jer's favorite time!)

Anyway, here it is:

Monday
Oatmeal
Wendy's (we had to go to the doctor today)
Chili & Cornbread

Tuesday
Eggs & Grits
Sandwiches
BBQ Meatloaf (I'll post the recipe for this, and trust me, YOU WANT this recipe!)

Wednesday
Sausage Pancake Muffins
Chili Mac
Mexican Ravioli

Thursday
Oatmeal
Sandwiches
Roast Chicken, Potatoes, & Carrots

Friday
Cinnamon Swirl Toast & Eggs
Leftovers
Chicken Stirfry

Saturday
Pancakes (or French Toast Casserole)
??
Going out to a Birthday Party

Sunday
Muffins
Burritos
Leftovers

In a slightly related note, I want to highly recommend a good cookbook for all you frugal, wanna-be healthy gals (or guys).  The More-With-Less Cookbook by Doris Longacre is a great book.  Tons of simple, healthy recipes made mostly with real food.  The few recipes that call for ingredients that you might not want to use could easily be replaced with somthing you're more comfortable with, i.e. butter for margarine, etc.   There are tons of great tips about how to stretch foods from one meal to the next.  I got mine used off of Amazon several years ago, and I love it!

I have so many posts I want to write right now, but I don't want to bombard my meager readership with too much at once and have nothing left! Ha! Anyway, prayers for my family would be appreciated right now as we have 5 out of 6 members on antibiotics.
