1 - 1 1/2 lb ground beef, turkey, or pork
1 medium onion, chopped
1-2 bell peppers, chopped
4-5 mushrooms, chopped
4 cloves of garlic, minced
1 tsp Italian seasoning
salt & pepper to taste
Combine all the above ingredients in a large skillet. Cook over medium-high heat until meat is cooked through. Spread in the bottom of a well greased 9x13 pan.
Spread 1/2 jar of spaghetti sauce over meat and veggie mixture. Cover with pepperoni and shredded mozzarella cheese. Sprinkle with grated parmesan.
Topping:
1 c. milk
1 T olive oil
2 eggs
1 c. plain flour (I used whole wheat)
1/2 tsp. salt
Mix, stirring just until combined. Pour over casserole. This makes a very thin layer of topping on your casserole. If you wanted a thicker topping, you'd need to make more batter.
Bake at 350 for 30-35 minutes. Enjoy!
You could get creative with this and use other pizza toppings that you like: spinach, tomatoes, black olives, artichokes, pineapple (if you're crazy enough to like that sort of thing), etc. It's made just like an upside down pizza, so use your imagination.
