With having our new foster baby in the house, I've barely had time to think much less write any blog posts. I also haven't had time to make out a menu for the past two weeks. Hopefully I can spend some time doing that this weekend. We've got to get our lives back to "normal"!
On to the meatloaf...
Let me start by saying that I don't like meatloaf, never have. I've tried all kinds and varieties, and never found one I liked... till now! After I gave birth to Elizabeth, one of my good friends brought us dinner, BBQ Meatballs and Mac & Cheese. I was thankful to get it since it meant I didn't have to cook, but wasn't really looking forward to it. After I ate it though, I just couldn't believe how much I loved it. When I had Ben, I started to ask her to fix me the same thing again, but thankfully she didn't remember that she had fixed it before and so brought it again. I was excited!
I found this recipe in a magazine, and it is close to hers. It is just so good. It's one of Elizabeth's favorite meals!
2 lbs ground chuck
1 box of stuffing mix (not cornbread stuffing)
1 cup of water
2 eggs
1/4 cup BBQ sauce + more for the top
Combine all ingredients and shape into a loaf. Place in a greased 9x13 baking dish. Cover the top with more bbq sauce. Bake at 350 for about 1 hour. You'll never put ketchup on a meatloaf again!!
Now, having said all that, I'm trying to avoid processed foods. So how can I keep making this meatloaf, but without the processed ingredients?

hmmm... I know on the website there is a recipe for bbq sauce... you could try that...
as far as the stuffing mix... I'm not sure what is in it... maybe try to make some flavored breadcrumbs?
