This is Evan's favorite dish. He loves to make it, too! It's a quick and easy "go to" meal. I wish I could find some whole wheat ravioli that wasn't outrageously priced. I guess I could make up a big batch to freeze and have on hand.
1 bag frozen, cheese ravioli
1 can enchilada sauce
1 cup salsa
1 cup shredded cheese
1 can sliced, black olives
Cook ravioli according to package directions. Meanwhile, in a large skillet combine the enchilada sauce and salsa. Heat till bubbly. Add the cooked ravioli and stir to coat. Top with cheese and olives. Cover and remove from heat. Let sit until cheese is melted. Serve with sour cream.
So simple and so good!
