Super Bowl Menu

I can hardly believe I'm saying this, but I forgot that Sunday is the Super Bowl.  As Jer was looking at our menu plan for the week, he was very dismayed to find that I was planning to have leftovers during the Big Game.  So, I've had to tweak our menu a little bit.  Here is our newly revised menu for Super Bowl Sunday

Breakfast: Muffins at church
Lunch: Leftovers

Game Time:

Homemade Pizza
Chips and Homemade Salsa
Cheese Sticks
Jalapeno Poppers
Peanut Butter Popcorn


Homemade Pizza - I'll be using this recipe from AllRecipes.com to make the pizza crust.  I'll set out a variety of toppings so that each person can make their own pizza.  I'll probably do individual sizes for the kids.  I plan on making mine a Super Veggie with spinach, artichokes, roasted red peppers, etc... oh, I can't wait!

Homemade Salsa
1 onion, quartered
1 bunch of cilantro, washed, dried, and leaves removed from stems
3-4 garlic cloves
juice of 1 lime
5-6 pickled jalapeno slices (more if you like it super spicy)
salt and pepper to taste
2 cans diced tomatoes

Add onion, cilantro, garlic and jalapeno to the bowl of your food processor and process till finely chopped.  Add remaining ingredients, and process for a few seconds to combine.  Serve immediately with your favorite tortilla chips.

Cheese Sticks

1 block of mozzarella cheese, cut into slices
1 egg, beaten
1 c. bread crumbs
spaghetti sauce for dipping

Dip cheese slices into egg, and roll in bread crumbs.  Place on a baking sheet, and freeze for at least 2 hours.  When ready to serve, fry cheese slices in hot oil until golden brown.  If you want "sticks" you could use string cheese cut in half, but this has the same flavor for less money.

Jalapeno Poppers

10-20 jalapenos, cut in half and seeded
2 cups shredded cheddar cheese
2 eggs, beaten
2 cups bread crumbs

Stuff each pepper half with a couple of tablespoons of the cheese, place on baking sheet and freeze for at least two hours.  Dip each frozen pepper into the egg and then roll in bread crumbs.  Return to freezer for another hour.  When ready to serve, fry in hot oil until golden brown.  Serve immediately.

Both of the above take a little time to prepare, but they're so much cheaper than buying them in the frozen food section.  These are good, but might be better with a batter coating.  If you come up with anything, let me know and I'll give it a try.

Peanut Butter Popcorn - this recipe is from the More-With-Less Cookbook that I mentioned yesterday.

2 quarts of popped popcorn
1/2 c sugar
1/2 c honey
1/2 c chunky peanut butter
1/2 t vanilla

Cook sugar and honey to a rolling boil.  Remove from heat and add peanut butter and vanilla.  Pour over popcorn, stirring to coat.

hey linda! love the blog and i am impressed with your super bowl menu. i have been trying to perfect my homemade pizza over the past year or so. this week, i made the dough in the bead machine (as usual). but then, i let it sit over night in the fridge. it made all the difference. the dough was crispy on the outside and soft in the middle. i don't know if your recipe calls for this, but you should try it if it doesn't. hope all goes well with your new addition to the family. sounds great! love---sara

Linda, I have to try your fried cheese sticks. I never really thought about making them myself. We love them, so I really should try. I have a similar treat that you, Jer, and the kids might like. I take bought cheese ravioli, dip it in egg and then Italian-flavored bread crumbs, and fry in oil. A homemade take on Olive Garden's fried ravioli. Definitely not healthy, but oh so delicious! We miss you! --Julie G.
